Capsicum annuum Jalapeño Pepper

Capsicum annuum Jalapeño Pepper is the world’s most popular chili variety, cherished for its perfect balance of flavor and medium heat. Growing to about 24 to 36 inches tall with a spread of 14 to 18 inches, this compact, upright bush is a staple for vegetable gardens, raised beds, and patio containers. Unlike many ornamental peppers, the Jalapeño is a culinary workhorse, producing an abundance of thick-walled, 3-inch pods that transition from a glossy dark green to a brilliant crimson red, offering versatility in harvest time depending on the desired sweetness and heat level.

Culinary and Practical Uses

  • The thick, crisp flesh is ideal for fresh slicing onto nachos, tacos, and salads, delivering a zesty crunch and a manageable heat (2,500 – 8,000 SHU).
  • Their sturdy structure and broad cavity make them the premier choice for making "Jalapeño Poppers"—stuffed with cheese, wrapped in bacon, and grilled or baked.
  • When allowed to fully ripen to red, they can be smoked to create "Chipotles" or processed into sriracha-style hot sauces for a deeper, sweeter, and smokier flavor profile.

Characteristics

  • Foliage: Dense, dark green leaves that provide a lush canopy, protecting the developing peppers from sunscald while adding visual appeal to the garden.
  • Growth Habit: Sturdy, bushy, and upright; the plants are self-supporting but benefit from a small stake or cage when heavy with fruit to prevent branches from snapping.
  • Flowers: Produces small, white, star-shaped blossoms throughout the summer, which are self-pollinating and serve as the precursor to the heavy fruit set.
  • Seeds: Harvested after the fruit fully ripens to red; the flat, creamy-white seeds are concentrated on the central placenta and are easily removed to reduce heat in cooking.

Growing Requirements

  • Sun: Thrives in full sun; requires at least 6 to 8 hours of direct sunlight daily to ensure vigorous growth and spicy fruit production.
  • Soil: Adapts to most soil types but prefers fertile, loamy, well-draining soil with a pH between 6.0 and 7.0; rich organic matter helps support heavy yields.
  • Water: Requires consistent, moderate watering; keeping the soil evenly moist prevents blossom end rot and ensures thick, juicy walls, though slight stress can increase heat
  • Spacing: Plant transplants 14 to 18 inches apart in rows 24 to 30 inches apart to allow for airflow and easy access for harvesting.
  • Maintenance: Harvest frequently at the green stage to encourage the plant to continue flowering; feed with a balanced vegetable fertilizer once fruit set begins.
